Today, I am finally sharing a recipe that I have been using for years – Imli Chutney Recipe. This sweet tamarind chutney is a staple in my kitchen, especially during the festive season.

Ingredients:

  • 1 cup tamarind pulp
  • 1 cup jaggery (gur), grated
  • 1 teaspoon roasted cumin powder
  • 1 teaspoon red chili powder
  • 1 teaspoon black salt
  • 1 teaspoon ginger powder
  • 1 teaspoon dry mango powder (amchur)
  • 1 teaspoon salt
  • Water (as required)

Instructions:

  1. In a saucepan, add tamarind pulp and jaggery.
  2. Place the saucepan on medium heat and let the mixture simmer for about 10 minutes, stirring occasionally.
  3. Once the jaggery has melted and the mixture has thickened slightly, remove it from heat and let it cool.
  4. Once cooled, strain the mixture to remove any seeds or fibers.
  5. Transfer the strained mixture back to the saucepan.
  6. Add roasted cumin powder, red chili powder, black salt, ginger powder, dry mango powder, and salt to the saucepan.
  7. Place the saucepan on medium heat and cook the mixture for another 10 minutes, stirring continuously.
  8. If the chutney appears too thick, add water gradually to achieve the desired consistency.
  9. Once the chutney reaches the desired consistency, remove it from heat and let it cool.
  10. Transfer the chutney to a clean, airtight jar and store it in the refrigerator.
